You would have to search for the following coding inside the template where you've pasted the Mailchimp signup form:
<input type="submit" class="button" value="Subscribe" id="mcsignupSubmit2304" />
Then you would replace the word "Subscribe" with "Suscribir" (or whatever you would like to provide there for your Spanish audience).
