Yes, you could use custom fields to allow a user to create a gallery. You could just create a bunch of image custom fields, but that would mean a user's gallery is limited to however many fields you create.
I think a better avenue to go would be with the Asset Gallery plugin because it would allow for a limitless number of photos in the gallery. However, it would only work for users with access to the backend, or would have to be reworked quite a bit.

Hey Dylan, Did you ever get anywhere with this? Was just thinking the same thing.
It would be great if a plugin could be developed for MT that supports a community more. Things like private messages and upload space for users. Would be more in line with competing against Joomla or Droople for a CMS solution.
