I just got started with MT and am using the Professional Web Page Template. This is probably an easy and dumb question but how do I change the image on the main index page that is packaged with this template? In fact, a more general question is “how do you change any image that comes packaged with a particular theme”?

Have a look in the theme stylesheet. Quite often you just need to change the image, use the same size if possible, and call it the same as the default. The images are stored in the mt-static folder, usually in the support folder.
